Low-Fat Zucchini Bread
Yummy bread made with fresh zucchini from the garden. And the secret ingredient: applesauce!

Ingredients
- 1 1/2 c all purpose flour
- 3/4 c sugar
- 1/4 t baking soda
- 1/2 t baking powder
- 1/4 t salt
- 1 1/2 t ground cinnamon
- 2 large eggs
- 2 1/4 c zucchini, shredded (about 2 medium)
- 1/4 applesauce
- 1 1/2 t vanilla extract
Baking Instructions
- Preheat oven to 350°F. Grease a 9” x 13” pan with nonstick cooking spray. Prepare cake batter as directed on package.
- Mix the dry ingredients together in a large bowl.
- Mix the eggs, zucchini, applesauce, and vanilla in another bowl.
- Combine the wet mixture with the dry mixture. Stir until well blended.
- Pour the bread batter into your prepared loaf pans.
- Bake for 25-30 minutes or until golden brown.
