Yummy Banana Chips!


Have leftover bananas and hungry for a healthy snack? Try these Yummy Banana Chips! Inspired by Martha Stewart's Baked Plantain Chips* in her Everyday Food Magazine. Instead of using plantains, go bananas! 

Yummy Banana Chips!

Simple and healthy snack to make using bananas and a few spices.

Prep Time: 10 min

Total Time: 50 min

Yields: 4 servings (1/2 of a banana each, or baking sheet-full of chips)

Ingredients

  • 2 medium bananas
  • 1 lemon
  • 1 t ground cinnamon
  • Salt and pepper
Baking Instructions

  1. Heat oven to 350° F. Spray baking sheet with non-stick cooking spray and set aside. 
  2. Peel and thinly slice the bananas on a diagonal and place the slices in a single layer onto the baking sheet.
  3. Cut and squeeze lemon juice into a small pourable container. Mix 1/2 t ground cinnamon into the lemon juice container.
  4. Pour half of lemon juice mixture over banana chips and season with salt and pepper.
  5. Bake 18-20 min or until golden and crisp on one side. 
  6. Take the baking sheet out of the oven, flip banana chips with a spatula and pour remaining lemon juice mixture and season with salt and pepper.
  7. Bake again for 18-20 min or until golden and crisp on other side.
  8. To store, place in an airtight container, up to 3 days. 

*Note: For more servings, add 1/2 banana for every additional serving.
